Preheat oven to 375
In a 9x13 place a little bit of olive oil on the bottom
Wash, peel and slice your eggplant. Not too thin. Line them on bottom of dish.
slice your onion and layer on top of the eggplant
Wash, and slice your tomatoes. Layer on top of the onion.
This is where I get my minced garlic, and sprinkle all over.
Then I take my olive oil and drizzle the top
Next we take our bread crumbs and generously cover the tomatoes. I prefer a good amount!
Slice up the stick of butter and place pieces evenly on top.
I add a little salt and pepper
Cover with foil and bake at 375 for 45 min
Take off foil and put the cheese on top of the dish and then back in the oven until melted.
Let cool and serve!
