Mama's Stuffed Bell Peppers

LOADS of flavor and extremely tasty. One of my favorites.

Ingredients
  

  • 4 Large Bell Peppers
  • 1/2 pound butter
  • 2 cups chopped yellow onion
  • 1 pound Ground Beef (Lean)
  • 1 tbsp minced garlic
  • 10 oz can diced tomatoes Use rotel for a spicy kick
  • 1/2 loaf fresh white bread
  • 3 eggs beaten
  • 1 tsp parsley dried
  • 1 dash favorite hot sauce optional
  • salt and pepper to taste
  • 1/2 cup bread crumbs
  • 1/2 cup water
Different variation
  • 1/2 pound beef
  • 1/2 pound peeled and deveined shrimp

Method
 

  1. Wash the peppers and cut the tops , taking the core and seeds out.
  2. Boil salt water, and place peppers in pot covered for ten minutes, do not over cook
  3. While peppers are getting ready, In a large pan ,melt the butter.
  4. add onions, garlic, and parsley and saute for 10 minutes.
  5. Remove bell peppers and drain. set aside
  6. Add the ground Beef to pan and cook for 20 minutes. When beef is cooked add the tomatoes.
  7. Preheat oven to 350
  8. Wet bread under faucet; squeeze out ALL liquid and add to sauteed ingredients.
  9. Add eggs, salt and pepper, and hot sauce. Stir well to blend
  10. Fill the bell peppers with the mixture.
  11. Place filled peppers in baking dish and 1/2 cup water in the bottom.
  12. top with bread crumbs
  13. Bake for 20-25 minutes until brown
