Your Grandma's Banana Pudding
L.Slezinger
Seriously all the memories come rushing back the second I make this dessert.
Total Time 20 minutes mins
Pudding
- 1/2 cup sugar
- 1/3 cup flour
- 1/4 tsp salt
- 3 egg yolks (save whites for later)
- 2 cups whole milk any cows milk is fine, but I love whole with this.
- 1 tsp Vanilla
- 5 ripe bananas the riper the better
- 1 box Vanilla Wafers
Meringue
- 3 egg whites
- 1/2 tsp vanilla
- 3 tbsp sugar
In a medium saucepan; mix together ½ sugar, flour, salt, egg yolks, and milk. Stirring constantly, heat over medium heat until mixture thickens. Remove from heat and stir in vanilla.
Line the bottom and the sides of a corningware or smaller dish with vanilla wafers; add a layer of sliced bananas and then a layer of custard; repeat layers.
In a large mixing bowl beat egg whites and vanilla on high speed until soft peaks form; gradually add remaining sugar 1 tablespoon at a time until stiff peaks form. Spread over custard until it completely covers. If you like use the back of your spoon to createthe peaks!
Bake in a 425⁰F oven for 5 minutes or until lightly golden brown. Can be served warm or chilled.
Double or triple this recipe, and use a 9x13! This is a smaller version with about 8 servings. But I love to make a good amount!!
