Note: This is only for two avocados. Four servings. Double or triple recipe depending on how many you will need!Make sure the avocado is ripe but not too ripe that its shriveled. We need that shell to be somewhat strong.Cut the avocados lengthwise… Take the pit out and scrape the meat of the avocado out with a spoon. Try not to tear the shell, we will need those shells in tact to stuff!Preheat oven to 375In a bowl throw in the avocado and mash it real good with a fork and stiradd all the ingredents and mix it up.Get your baking dish ready and put in the shells. Now fill each shell with the mixture as evenly as possibleYou will use every bit of that mix Bake for 10 minutesTake out and place shredded cheddar or mozzerella over each avocado. Place back in the oven for 5 more minutes or until the cheese is meltedYou’ll know when its about done because your kitchen will smell like heaven!Enjoy!
