Baked Avocado

I am VERY passionate about some Avocado! I get excited when I hear the word. I usually eat it with a little garlic salt, pepper with side of tomatoes. This recipe is so tasty and different! It would be a great app, side dish or even main course. Healthy and gluten free! But most importantly its EASY and TASTY!!

Avocado Bake

Ingredients
  

  • 2 Avocados Ripe but not too ripe, nice shell intact
  • 1 1/2 tbsp red onion chopped
  • 1 tsp minced garlic
  • 1/2 tbsp fresh lemon juice
  • 1/2 tsp olive oil
  • 1/4 tsp paprika
  • 1/2 tsp honey
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • pinch cayenne pepper optional

Instructions
 

  • Note: This is only for two avocados. Four servings. Double or triple recipe depending on how many you will need!
    Make sure the avocado is ripe but not too ripe that its shriveled. We need that shell to be somewhat strong.
    Cut the avocados lengthwise… Take the pit out and scrape the meat of the avocado out with a spoon. 
    Try not to tear the shell, we will need those shells in tact to stuff!
    Preheat oven to 375
    In a bowl throw in the avocado and mash it real good with a fork and stir
    add all the ingredents and mix it up.
    Get your baking dish ready and put in the shells.
    Now fill each shell with the mixture  as evenly as possible
    You will use every bit of that mix

    Bake for 10 minutes
    Take out and place shredded cheddar or mozzerella over each avocado. 
    Place back in the oven for 5 more minutes or until the cheese is melted
    You’ll know when its about done because your kitchen will smell like heaven!
