  • Eggplant bake

This recipe is one of those comfort dishes that is super easy to make. Sometimes it’s nice to have a little meat break and focus on the vegetables. This is a hearty dish and who can resist garlic, butter and cheese ? I am thrilled to share, especially during this time when we are confined to our homes. Thinking about everybody and praying the world will heal from this soon. Praying for comfort, Liz

    Chicken Spaghetti

I have to admit. Growing up I was NOT a fan of Chicken Spaghetti. In my mind the two ingredients should never mix. I was so SO wrong. Chicken spaghetti is a dish that should never go unnoticed. Its hearty, full of flavor and makes a ton! I love to jazz it up by adding a bunch of fresh yummy vegetables and some creole seasoning. Eat it right away or FREEZE it. I love a good freezer meal!

  • One Pot Cajun Cabbage

Oh this is a gooooooodn’! A CARB FREE, delicious one pot dish that is super healthy! I have my mother to thank for this recipe. She has made it for a long time and as much as I love this dish, I also love the nostalgia that is attached to it. And Yes I do go back for seconds and feel zero guilt I will go ahead and tell you, this is a spicy recipe. But please don’t let that scare you away. If thats not your thing, opt for a regular sausage instead of cajun. Maybe pick a mild Rotel, instead of the original . It is easy to…

  • Arkansas Green Beans

Ohhh how I love some green beans. Green beans with bacon, butter and soy sauce? ABSOLUTELY. My nana told me about this recipe years ago. Every time I make this for a friends, parties, or for the holidays, everyone wants the recipe! This recipe is perfect if you have to bring a side dish that will be serving a good bit of people. I always half it because i’m usually making this for my family on Meatloaf night. https://belleandbrine.com/mimis-meatloaf/ Let me know if you try it out! If you have never had Arkansas green beans, I highly recommend it!!

  • Blackberry Pork Chops with Sweet Potatoes

I love me some pork chops and I LOVE BLACKBERRIES. This is such a savory and flavorful meal. The sweet potatoes are the perfect side dish and it compliments the pork chop so well. The reduction is so tasty you could eat it straight! I understand blackberries are only in season until the beginning of fall, so using frozen will work too!! The most important step is brining the meat and letting it soak for at least an hour. Try it out and let me know what you think!

  • Unbeatable Burgundy Beef

Yep, that’s right. My husband said , “You need to add this to a weekly staple.” For gooooood reason too! It’s jam packed with flavor. And SO SO SO EASY. Mix it up in 5 minutes, preheat that oven and pop it in for 3 hours. Go to church. Go to that meeting and by the time you get home DINNER IS READY. And the best part is the smell of the house when you walk in door. Put it over pasta, rice, or even mashed potatoes. Try it and let me know how you liked it!

  • Mama’s Stuffed Bell Peppers

Stuffed Bell Peppers with a big old extra kick of FLAVOR! This recipe is super hearty. The smell of butter, onion and garlic in the pan just can’t be beat in my book. This is different version than your other stuffed pepper recipes. I have yet to come across one like this. Make it your own, don’t be afraid to make substitutions. I think the most important part of the recipe is making sure you prepare those peppers for baking. Its something I never did until a few years ago, and WOW did it make a difference! They are so juicy and tender, yet still in tact by the end…

  • The Best Southern Tuna Salad

I didn’t get to spend enough time with my Mimi. So the memories I do have of her, I really hold them dear to my heart. When I think southern cooking, I think of her. When I cook a meal every night for my family, I think of her, because thats exactly what she did. She took care of everyone. She could make a gourmet meal just off of whatever what left in the house. She was inspiring. I wish I would have been old enough to jot down these recipes she just had stored in her beautiful mind, but I didn’t. So now I do my best to make…

  • Eggplant Goulash

I love some eggplant. I’m constantly trying new ways to cook with eggplant and this recipe hits the spot. Its a stewy, hearty comfort dish that is VEGAN. Sometimes its nice to have a break from meats and focus on some delicious vegetables. Eggplants are so filling and PERFECT for stews. Its beginning to be the season for SOUPS and STEWS!
