Mimi’s Meatloaf
I am thrilled to share one of my favorite recipes of all time. When I think comfort food, I think MEATLOAF. My husband jokes that it was one of the reasons why he married me (Ha!) but I won’t argue. Everyone does meatloaf differently. My grandmother put diced tomatoes in her meatloaf and cooked it in a skillet all the way through, using the grease and adding flour and tomato sauce for the gravy. She was indeed super woman. My meatloaf harbors most of her ingredients to her recipe, and I think she would be proud! I have come up with a recipe that I won’t abandon anytime soon!

Ingredients
- 2 Ibs Lean Ground Beef
- 1/3 cup yellow onion
- 1 tsp salt
- 1/2 tsp minced garlic
- 1 large egg
- 1/2 cup ketchup
- 1/2 cup crushed saltine crackers
- 1/2 cup italian breadcrumbs
- 1 cup milk
- 1/2 tsp black pepper
Sauce
- 1/4 cup apricot jelly
- 1/4 cup brown sugar
- 1 tsp worcestershire
- 3/4 cup ketchup
Instructions
- Preheat the oven to 350 and start mixing the ingredients. I recommend removing any rings you may have on!Place in Prepared pan. For this much meatloaf you are looking at 9×13 type size. When I half the recipe, my favorite pan to use is a meatloaf pan that have two parts and catches the grease at the bottom. Bake for 40 min. Take out and top with half of the sauce . Return to the oven for another 40 minutes and then place the remaining sauce on top and voila!Let cool 10 min or so before slicingI love pair this with my Arkansas Green Beans. Notes
You can swap out the ground beef for ground turkey. Just make sure it is lean
Halfway through the recipe before I put the sauce on; If i am using a pan instead of a meatloaf tray, I will drain the grease drippings before I return to the oven.
Side note: Some ovens cook faster, so check on that meatloaf and make sure you are not over cooking it! Some of these newer ovens are like microwaves!

We loved this meatloaf!! I liked the texture of it which made it perfect for slicing for a samdwich. The topping was delicious! I could not find Apricot Jelly so I used Apricot Preserves and whisked it really well…it was perfect. I highly recommend thos recipe and will be adding it to my recipe box.
