Mimi’s Meatloaf
I am thrilled to share one of my favorite recipes of all time. When I think comfort food, I think MEATLOAF. My husband jokes that it was one of the reasons why he married me (Ha!) but I won’t argue. Everyone does meatloaf differently. My grandmother put diced tomatoes in her meatloaf and cooked it in a skillet all the way through, using the grease and adding flour and tomato sauce for the gravy. She was indeed super woman. My meatloaf harbors most of her ingredients to her recipe, and I think she would be proud! I have come up with a recipe that I won’t abandon anytime soon!

Kickin’ Pimento
LOVE me some good ol’ Pimento Cheese. I use to slap it on some white bread with a strong batch of Sweet Tea. I like to serve it as a dip! Its a dip with a little kick! Hope you enjoy! Xo

Chicken Parmigiana
When it comes to comfort food, this recipe really hits the mark. My husband and kids loved it from the start! I think the marinara is especially important when going for a dish like this. So go for the San Marzano or something similar. Go as Authentic as possible! I have made my own marinara and you will not go wrong by choosing a San Marzano type sauce. Also keeping some Italian bread crumbs in your pantry is a must!

Gazpacho
This recipe keeps me going during the summer months! I had never tried Gazpacho until I spent a few month in LA!. When I was competing on, “The Voice”, we were sequestered at a hotel that was connected to an amazing restaurant called, The Daily Grill. This is my copycat recipe that I have found to be as close as possible! I hope you enjoy!

Sunflower Seed Dressing
I am so thrilled to make my first recipe post! This one is extra special to me because it takes me back to Greenville, MS in the early 90’s. There was a cute little restaurant called the Shelton House. They served the most wonderful salad dressing. I have never tasted anything like it. Salty, Sour and sweet all into one. As a 7 year old, salad was never my first choice, but this dressing changed the game for me! You won’t find many dressing like this out there, and I am happy to share it with you. XO

Welcome!
Welcome to Belle and Brine! My name is Liz. Just a wife and mother of two trying to keep my family happy and well fed! Convincing toddlers to eat anything besides crackers and cheese has been quite the challenge, but challenge accepted. I wanted to create a site I can share some of my favorite recipes. I will be adding each week. My kitchen is my own personal safe haven. Give me a wooden spoon and a cast iron skillet and I’m ready to conquer the world! I am originally from Mississippi and you will see from my posts that I am very influenced by southern fare. I do…
