Chicken Parmigiana
When it comes to comfort food, this recipe really hits the mark. My husband and kids loved it from the start! I think the marinara is especially important when going for a dish like this. So go for the San Marzano or something similar. Go as Authentic as possible! I have made my own marinara and you will not go wrong by choosing a San Marzano type sauce. Also keeping some Italian bread crumbs in your pantry is a must!
Chicken Parmigiana
Skip the Olive Garden and TRY THIS
Ingredients
- 3 Chicken breast
- 2 tbsp basil fresh
- 1 tbsp garlic powder
- 2 tbsp italian herb
- 3 eggs
- 1/2 cup all purpose flour
- 1/2 tsp salt and pepper
- 1/2 cup olive oil
- 1.5 cup italian bread crumbs
- 6 slices fresh mozzerella
- 3/4 cup parmesan
- 1 1/2 cups marinara san marzano
Instructions
- Beat that chicken breast! Its my favorite part. You want it thin.Put it in a bag or do it yourself but wash those hands after!!!then go as follows Flour , eggs , then bread crumbs-evenly coat!put 2-3 tbsp oil in your skillet on medium-high and brown for about 2-3 minutes on both sidesPreheat oven at 425F. Lay browned chicken in a large baking pan or dish. Layer the chicken as follows : mozzarella slices then tomato sauce over top. Bake in oven for 14 minutes – remove from oven then sprinkle with shredded parmesan cheese. Place back in oven and broil on HIGH or 1 minute until cheese is melted and browned. Sprinkle with fresh basil and serve with your favorite pasta!

I love to serve this with some green beans or a nice salad with some lemon vinaigrette. Will post the recipe under my favorites!
