
Eggplant bake

This recipe is one of those comfort dishes that is super easy to make. Sometimes it’s nice to have a little meat break and focus on the vegetables. This is a hearty dish and who can resist garlic, butter and cheese ?
I am thrilled to share, especially during this time when we are confined to our homes. Thinking about everybody and praying the world will heal from this soon.

Layered Eggplant
Such an amazing and easy dish the whole family will love!
Ingredients
- 1 Large eggplant
- 1 yellow onion
- 1 cups bread crumbs (seasoned or Italian )
- 2-3 large tomatoes. If not season I use Campari
- 1 tbsp minced garlic
- 1 stick butter (salted)
- 1 cup shredded mozzarella
- 1/4 cup olive oil
- salt and pepper
Instructions
- Preheat oven to 375
- In a 9×13 place a little bit of olive oil on the bottom
- Wash, peel and slice your eggplant. Not too thin. Line them on bottom of dish.
- slice your onion and layer on top of the eggplant
- Wash, and slice your tomatoes. Layer on top of the onion.
- This is where I get my minced garlic, and sprinkle all over.
- Then I take my olive oil and drizzle the top
- Next we take our bread crumbs and generously cover the tomatoes. I prefer a good amount!
- Slice up the stick of butter and place pieces evenly on top.
- I add a little salt and pepper
- Cover with foil and bake at 375 for 45 min
- Take off foil and put the cheese on top of the dish and then back in the oven until melted.
- Let cool and serve!
