Kickin’ Pimento
LOVE me some good ol’ Pimento Cheese. I use to slap it on some white bread with a strong batch of Sweet Tea. I like to serve it as a dip! Its a dip with a little kick! Hope you enjoy!

Pimento Cheese
Something my great grandmother always kept in her fridge.
Ingredients
- 2/3 cup mayonnaise I prefer olive oil mayo
- 4 oz cream cheese softened
- 1 tsp lemon juice fresh is best
- 1 tsp worcestershire
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/4 tsp ground mustard
- 8 oz yellow sharp cheddar I like to shred my cheese but buying shredded is great!
- 8 oz white cheddar
- 4 oz Jar diced Pimentos
- 1/4 tsp cayenne pepper (optional if you like a kick)
- 1 box Ritz crackers Bacon ritz is wonderful
Instructions
- You will want to mix your cream cheese, mayo, lemon juice and worcestershire in a bowl.
- Now add in all of the spices!
- Shred your cheese and dry off your pimentos. Add the pimentos and cheese to the mixture
- Mix it up real good
- Place in a lovely serving tray with your choice of crackers and voila!
Notes
This is super easy and such a hit in any setting.
Its a great dish to keep in a container in your fridge. I would like to add that the Bacon Ritz have completely won me over. It adds the extra kick of flavor, not that it even needs it.
Add some Jalapeño if you are a spicy mommy hot tamale!
