Mama’s Stuffed Bell Peppers

Stuffed Bell Peppers with a big old extra kick of FLAVOR! This recipe is super hearty. The smell of butter, onion and garlic in the pan just can’t be beat in my book. This is different version than your other stuffed pepper recipes. I have yet to come across one like this.

Make it your own, don’t be afraid to make substitutions. I think the most important part of the recipe is making sure you prepare those peppers for baking. Its something I never did until a few years ago, and WOW did it make a difference! They are so juicy and tender, yet still in tact by the end of the baking.

Try it out, and let me know what you think. I have included a different variation. Instead of using 1 pound of ground beef, use 1/2 pound ground beef and 1/2 pound peeled shrimp. Add in a little hot sauce or some cajun spices. ITS WONDERFUL.

Mama’s Stuffed Bell Peppers

Ingredients
  

  • 4 Large Bell Peppers
  • 1/2 pound butter
  • 2 cups chopped yellow onion
  • 1 pound Ground Beef (Lean)
  • 1 tbsp minced garlic
  • 10 oz can diced tomatoes Use rotel for a spicy kick
  • 1/2 loaf fresh white bread
  • 3 eggs beaten
  • 1 tsp parsley dried
  • 1 dash favorite hot sauce optional
  • salt and pepper to taste
  • 1/2 cup bread crumbs
  • 1/2 cup water

Different variation

  • 1/2 pound beef
  • 1/2 pound peeled and deveined shrimp

Instructions
 

  • Wash the peppers and cut the tops , taking the core and seeds out.
  • Boil salt water, and place peppers in pot covered for ten minutes, do not over cook
  • While peppers are getting ready, In a large pan ,melt the butter.
  • add onions, garlic, and parsley and saute for 10 minutes.
  • Remove bell peppers and drain. set aside
  • Add the ground Beef to pan and cook for 20 minutes. When beef is cooked add the tomatoes.
  • Preheat oven to 350
  • Wet bread under faucet; squeeze out ALL liquid and add to sauteed ingredients.
  • Add eggs, salt and pepper, and hot sauce. Stir well to blend
  • Fill the bell peppers with the mixture.
  • Place filled peppers in baking dish and 1/2 cup water in the bottom.
  • top with bread crumbs
  • Bake for 20-25 minutes until brown
