One Pot Cajun Cabbage

Oh this is a gooooooodn’!

A CARB FREE, delicious one pot dish that is super healthy! I have my mother to thank for this recipe. She has made it for a long time and as much as I love this dish, I also love the nostalgia that is attached to it. And Yes I do go back for seconds and feel zero guilt

I will go ahead and tell you, this is a spicy recipe. But please don’t let that scare you away. If thats not your thing, opt for a regular sausage instead of cajun. Maybe pick a mild Rotel, instead of the original . It is easy to make your own. My mother loves to put a tablespoon of butter on the top, and I do too! I think it gives it an extra punch. BUT I have had it without and its equally as delicious.

You will want to use a sautée pan and have a wooden spoon nearby , as you will be stirring the cabbage as it cooks down.

One Pot Cajun Cabbage

A kickin', healthy, carb-free meal that serves plenty!

Ingredients
  

  • 1 Medium yellow onion
  • 1 Pack of Cajun Andouille Sausage
  • 10 oz Rotel Original can
  • 1 head of green cabbage
  • 1 tbsp butter salted
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. First grab a skillet, or sautee pan
  2. Chop up your onion, slice your sausage and throw in pan on medium high heat
  3. sautee until onions are transparent and sausage is a bit browned
  4. chop up your cabbage into squares so they are too large
  5. throw on top of cooked onions and sausage
  6. open can of rotel and dump on top.
  7. Put the lid on the pan and let the cabbage simmer down, stir every few minutes or so
  8. put 1 tbsp butter on top
  9. cover and let simmer for about 20 minutes or so while stirring occasionally.
  10. season to taste

Notes

Don’t add the butter if its a deal breaker! I have had without, and it still wonderful.
This is an easy one pot dish that you can play with.
Salt and pepper or add other desired spices!
** This isn’t a dish to let sit and cook. You will have to stir it every 10 minutes or so on simmer just make sure its even throughout and not burning!
*This recipe can also be made with lean ground beef.
