Layered Chicken Bake

Now this is a recipe I feel great about because its HEALTHY! No bacon grease in this one folks! LOL. Gluten free as well!

I remember my mother doing something similar to this dish growing up. Over the years I have added in new variations. This is important when making this dish, the Worcestershire and garlic salt are the key ingredients. Its going to leave leftover sauce in the dish you are going to want to pour over your dinner bowl. 🙂 I don’t go a week without making this. Feel free to swap out the vegetables I have chosen with some of your favorites and make it your own!

Equipment

  • 9×13 baking dish

Ingredients
  

  • 4 Boneless Chicken Breasts
  • 1 yellow onion
  • 2 Bell peppers
  • 1 red pepper
  • 2 Ripe Tomatoes I use vine tomatoes when its not season
  • 2 Russet Potatoes
  • 1 cup shredded mozzarella cheese

oils and Spices

  • 1 Tbsp Garlic Salt
  • 5 oz worcestershire sauce any brand
  • 1/2 tsp Black pepper

Notes

This is a super easy and it is so YUMMY!! Gluten free as well.
 
First you are going to preheat the oven to 375 degrees** 
Grab your 9×13 pan 
Place your chicken breasts in the pan.
Cover the Chicken with Worcestershire at a dash of garlic
Thinly slice up your potatoes and layer over the chicken covering it up!
Add Worcestershire, Garlic Salt on top.
Slice your Bell Peppers. I like to keep then intact with a nice circle form, but you can chop them any way you’d like. Cover the potatoes.
 Next, we slice that onion and place the rings over the peppers
Then thinly slice your tomatoes and cover the Peppers
 Cover it with Worcestershire and garlic salt. This is going to be the extra juice at the end that your’e gonna wanna to place in your dinner bowl! It is so yummy! I douse my dish in Worcestershire!
Add that black pepper and cover your dish in Aluminum Foil.
Bake for 45 minutes 
Take out and throw on your Shredded Mozzarella! Place back in oven 5 minutes or until it melts.
I suggest serving in a dinner bowl and pour that extra juice on top.
